I don’t do a lot of holiday baking, but there are certain family favorites that make an appearance every year. Last week, I made a batch of shortbread cookies in miniature Christmas shapes for my publishing team and sent those off with some dark chocolate hot cocoa for my chilly Minnesota compatriots.
This week, I’m making my chocolate peanut butter krispy treats. 4 out of 5 Witemeyers agree that these are the best sweet bars ever! (The youngest Witemeyer somehow missed the peanut butter loving gene. Not sure how that happened. Of course, he was the only one to inherit my dad’s recessive curly hair gene, too, so he’s a special case all the way around.)
They are easy and quick to make and are rich and delicious. We store ours in the refrigerator to ensure the chocolate doesn’t melt, but they are best enjoyed at room temperature.
Chocolate – Peanut Butter Crispies
- 1 cup sugar
- 1 cup light corn syrup
- 2 cups chunky peanut butter
- 2 Tbls margarine
- 5 cups Rice Krispies cereal
- 1 – 12 ounce pkg chocolate chips
In a large saucepan, combine the sugar and syrup. Cook and stir over medium heat for 5 minutes. Remove from heat. Stir in the peanut butter and margarine. Add the cereal. Mix until completely coated. Spread evenly in a 13×9″ pan. Melt chocolate chips over low heat and spread over the cereal mixture. Chill an hour then cut.

I love the cut out cookies that we decorate. It’s a family tradition we do that involves working in the kitchen with the kiddos. It’s tons of fun and makes lots of great memories along the way. I love that they learn about baking, team work and creating all at the same time. It’s a time to unplug from electronics and just have fun.
I also love fixing all the candy recipes that Mom passed down to me. She also passed down the idea of fixing goodie boxes and delivering them to the elderly during the holidays visiting with them when I made the delivery. The smiles I have gotten just for sharing a little time and sweets makes all the work definitely worthwhile.
