I am LOVING this newly adapted low carb lifestyle!
I’d been considering cutting back on carbs for a while—which represents a huge decision for this Carb Queen. But the timing never seemed quite right.
Then about six weeks ago, I was sitting at my desk writing. It was late, around 1:30AM or so (my best writing hours are after midnight, go figure). And I felt a nudge to really start eating better and to get in better shape. Then I thought, “But I’m on another major deadline. Now’s really not the time.”
Then I heard this still, inaudible voice…
“So, My mighty power within you changes when you’re on deadline.???”
<insert crickets chirping here>

There I was. Sitting silent in my office. At 1:30AM. Completely and thoroughly convicted by the Holy Spirit.
Because my verse for 2016 is Ephesians 1:19-20:
“I also pray that you will understand the incredible greatness of God’s power for us who believe him. This is the same mighty power that raised Christ from the dead and seated him in the place of honor at God’s right hand in the heavenly realms.”
So you can imagine my “Ouch!” when realization set in.
So, the next morning—well, actually at 1:35AM that morning, because I’d been contemplating grabbing some microwave popcorn at the time—I stopped eating bread, potatoes, rice, popcorn, cakes, cookies, pies, white flour, white sugar, honey etc… And went with a low carb lifestyle.
And I have to tell you…I feel FABULOUS. I’m down 15 lbs so far and want to lose another ten to twelve. And truly, I haven’t felt deprived even once. The reason?
Because of fabulous low carb websites with tons of yummy recipes, like these:

So delicious! I topped mine with some sour cream, a little guacamole, and salsa and…YUM!

Low Carb Browned Butter Chocolate Chip Blondies
These are made with yummy almond flour but, I promise you, they taste like “normal” blondies.
Low Carb Cheese Crackers (think Cheez-Its)
These are incredibly easy to make and are so satisfying!
I could go on, but to borrow a phrase from Julie Andrews… These are a few of my “favorite low carb things!”
Through these past few weeks, Jesus has been tenderly, tenaciously showing me areas of my life where I need more self-discipline. More surrender to His will, not mine. And this change in my lifestyle is really jumpstarting that commitment on so many levels. For which I’m so grateful.

Good for you, Tammy! I’m gluten free and dairy free and have been for three years. Once I made the switch I was able to go off of acid reflux medication and my indoor/outdoor allergies calmed down. (They didn’t go away entirely, but they did calm way down).
I’ll have to check out the web sites you mentioned! I’m always looking for new recipes to try. 🙂

Thank you for this info, Tamera!! Carbs have been an issue for me for many years, will try some recipes from the website you recommended. The fact the food tastes good will make it much easier adhering to the food plan.

I really need to do this. I am so tired and groggy all the time. I eat a lot of carbs so I am going to try a no carb diet and see if I will feel better.
