When you love something you just have to share it, right? And I love eating Keto (low carb gluten free).
Here’s why:
I can still eat the things I love while losing weight and getting into better shape. I have an insatiable sweet tooth and a love affair with anything bready. But like bad boyfriends, I love those things but they do not love me back.
Plus, frankly, in the past I’ve used the sweets and the gluten-laden breads as rewards. Even as crutches when I’m stressed. Eating Keto (LCGF) has freed me from that cycle and has literally lightened my load by 20+ lbs.
Here are some of my favorite go tos that are always baked and close at hand in my kitchen:
“Oatmeal” Chocolate Chip Cookies

Don’t be fooled. There’s not a speck of oatmeal in those little puppies above but they are to die for. Especially warm from the oven. Same for the Chocolate-stuffed Peanut Butter Cookies. The texture is perfect!

Oh MY that supper table scene with the Whitcombs had me ROTFLOL ! I LOVE those highlander Whitcombs! Tammy you made each character come alive, it was like watching a movie! Like you, I try to follow a low carb plan, operative word, TRY. I follow your boards on pinterest and have seen some yummy recipes, but I haven’t tried any of the desserts yet, I must be afraid I’ll find one I love and can’t stop eating it. These you’ve posted today have me drooling (it’s lunch time and I’m hungry, lol) I’m definitely going to try the PB cookies and Chocolate snack cake! As for what’s in our kitchen, well we started the Fast Metabolism Diet a while back so I would have to say….fresh vegs. and fresh fruit. Tamera, I have read all your books and yet my favorites have been the Belle Meade series and the Belmont Mansion series. My husband and I pastored in Eastern Tennessee in Oak Ridge and Western Tennessee near Dyersburg. We always passed through Nashville on I-40 on our way to visit family in Western North Carolina. I can’t wait to read the new book just released and book 3 in the Belle Meade Plantation series that will be released in August. Thank you for the recipes as well. My favorite go to food is baked cauliflower. Oh my it is so good. You brake apart the cauliflower head on a cookie sheet with a little bit of olive oil and salt and pepper. Put in the oven for at least 30min to bake. It’s hard not to eat the whole thing. I have read all of your books so far and fell in love with each one. Thank you for continuing to write.

Thank you for the recipes. I have wheat/soy allergies, so I am always looking for good gf recipes. I love cooking, but since going gf, I have discovered how good Amy’s gf “frozen dinners” are. After convincing my library to order it, I just finished reading “A Note Yet Unsung” and was completely drawn in by yet another of your books. Especially endearing was the Tennessee highlander setting, which has intrigued and touched me ever since my father took our family to the Smokies years ago. Somehow this new element gave this book a freshness that third books sometimes lack. The dialect was right on and so much fun to read! Everything you write speaks to me in some deep way, and your characters are so beautifully real. Thank you for them. They have become a part of me.
As far as low carb goes, I sure would appreciate any recipes that are nut free, as I am cooking for a large family with a whole slew of allergies, including nuts. I make a cookie out of eggs, coconut, lemon flavoring, apple sauce, salt, and stevia that’s pretty yummy.

One of my favorite go to treats/meals for breakfast are breakfast cookies with almond butter, oatmeal, and banana! They are surprisingly filling and have just the right amount of sweet (since the recipe has you add in a few chocolate chips). The best part is that they freeze well for up to three months and thaw overnight in the fridge.

Today I drove 75 miles to the nearest mall with a bookstore so I could replenish my reading material. B & N was out of Alexander’s new book, so I went to Lifeway and they were also sold out. I went to two other stores and got the same story. I come home to find that Tamara Alexander is giving away a copy of her book. Maybe that is why the stores did not have a copy of the book.
