Y’all already know I love to bake. But I gotta tell ya…
Since I moved to a low carb/gluten-free lifestyle, I am having a blast with baking with almond flour, coconut flour, coconut oil, flax seed meal, Swerve, and other ingredients I’d not used much before. If at all!
Here are some of my recent LCGF yummies…
Zoodles! (Zucchini Noodles) They are delicious!
Especially with spicy marina sauce!
Don’t have a “spiralizer?” Neither did I, but I remedied that right quick once my daughter made these for us. Oh be still my LCGF heart! Here’s the one I ordered.
Next, look at this lovely Almond Butter Cake. So good! And grain free!
Toasted in the morning for breakfast…oh so yummy! (This is actually a pic of it just going into the oven. But by the time I thought of taking a pic of my buttery griddled slice of almond butter cake…it was gone. So, I had to make do.)
Have I mentioned yet that I’m loving this new way of baking?
Next, a staple in our kitchen now…
Chocolate donuts! That are really muffins but I was craving a doughnut. Go figure. And I’d just gotten this handy dandy mini-donut pan so what did hinder me? Nothing!

I have a bit of a girl crush on Carolyn at All Day I Dream About Food. She is a saving grace when it comes to living the LCGF lifestyle!

Oh, and please notice my new dishes above. I love the color. I got them recently at a cool little store in Franklin called PD’s. I’d had my last set of brown dishes forEVER (and loved them, but it was time). Joe and I ran into PD’s one day and saw these. I commented, “Wow, I love those.” He said, “Get them!” Don’t have to tell me twice!
Lastly, another website I visit often is Low Carb Linda! She has a thin crust pizza recipe that is to die for! And yes, I’ve tried about every low carb pizza crust out there (including almond flour and cauliflower), and this is a fav!
Never mind the scorched parchment paper. It’s part and parcel when baking LCGF. But also holds a hidden treasure in that clean up is a breeze!
A touch of fall in our kitchen
I’m so ready for fall, I can taste it!
My daughter, Kels, and I recently discovered a fabulous little shop—The Faded Farmhouse in Arrington (waving to you, Matthew!), and we love their stuff. Got this cool container and flowers there for the kitchen table.
So, are you a fan of fall too? What have you been baking lately? Any fall baking in your kitchen yet? I made a Pumpkin Cheesecake dish yesterday. Again, LCGF and so good.

There should be a warning with this post to make sure you have a full stomach prior to viewing because now I’m STARVING!!! All of this food looks so delish – especially the chocolate donuts & pizza. Yummy. I am going to try all of these. As I grow older and travel more, I find my delicate tummy goes wacky on me at times. I think eating more health will help that. And your examples look so delicious even a southern girl who loves any fried can eat this! Now I’m craving a chocolate donut 🙂
