I last baked this delicious Keto “Samoa” cookie bar. You might have eaten a Girl Scout Samoa cookie? Well this is the low carb gluten free version of that, and it…is…fabulous!
I’ve been eying this recipe for a while yet haven’t made it before last week. I’m so glad I did.

Next? The last book I read is Sitting at the Feet of Rabbi Jesus by Ann Spangler and Lois Tverberg.
I cannot recommend this book highly enough.
It’s eye-opening and faith-building. Jesus was Jewish, after all, and studying the Bible through the Middle Eastern Lens changes everything. Our Western view is so often skewed and inaccurate.
I listened to the audio version of Sitting at the Feet of Rabbi Jesus on my trips to and from Atlanta recently and, once I finished, I immediately began the next book—Walking in the Dust of Rabbi Jesus which is equally captivating. Having just returned from Israel, I find my yearning for more of Jesus—learning more about how he lived, what the culture was, the deeper meanings in his parables—is especially keen.

I snapped this picture last night while Joe and I walked the dogs. We’re getting ready to plant our pots this week and I love this little flower—the vibrant color, the delicate petals, its hardiness.

Last sweet I baked was at Christmas, my mother’s recipe, Praline Spice Cake. Last book I read, Dan Walsh’s Perilous Treasure for our March book club selection, last picture was of my bedding plants to show my friend in another state since we’ve been texting about gardening. Mine are vinca, a very dependable and hardy plant for our hot summers. I need to learn how to make sweets that are keto.
Praline Spice Cake sounds divine, and great on Dan’s book! Making Keto sweets is really a breeze. Different ingredients but not difficult by any means.

I love any kind of scone, Joelene! And Ree Drummond is amazing. I’ve heard she has a low carb cookbook coming out. ?? Bless on the Notre-Dame. So sad to watch that burn. Such religious significance in that glorious gothic architecture.

Last dessert I made was rice crispy treats, but my 11 year old made a butterscotch pie this past weekend for a church potluck (which is much more impressive). Last book I read (listened to) was Brunch at the Bittersweet Cafe. Last photo was a picture of my 13 year old daughter with her band director & flute teacher at the middle school All Star Band weekend.
It’s been AGES since I’ve had Rice Krispy Treats, Karen, but I still remember how yummy they are. And a butterscotch pie! I’ve got an OLD recipe for butterscotch pie. In fact, it’s in the current book I’m writing. Such a delicious dessert. Cool about your daughter being in the All Star Band! I’ve always loved the flute and admire those who play it. I played the clarinet! For about three weeks. : }

Last sweet I baked: NY-style crumb cake for Christmas morning, which I will bake again on Saturday for Easter morning. Can you tell I’ve cut down on carbs? 🙂 Most of it will go to church to fortify my fellow choir members between early services.
Last book: In the middle of 3 right now: Savage Continent (a history on the chaos in Europe after V-E Day), and two by Maya Rodale: Dangerous Books for Girls (a dissertation on the whys and wherefores of romance novels) and Lady Bridget’s Diary. (The last because that first book is really heavy, heartbreaking stuff.)
Last photo: We were hit with an 8″-plus snowstorm here in northern IL on Palm Sunday. After a 45-minute crawl home from church, I was so frustrated I stuck my palm branch in the snow, took a photo, and laughed at the ridiculousness of it! So did my friends on FB!

The Last sweet I cooked was a blueberry Cobbler. I’m not crazy about it. I like the crust and juicy part but I don’t like the berries. My husband loves it. My last book was a novella that I’m reviewing called Up From The Sea a prequel really for Whose Waves These Are by Amanda Dykes. My last picture I took was a selfie of my youngest grandchild (she’s 5) and myself. She actually clicked the button when we got posed. Not real good picture but we had fun. The last sweet was an angel food cake for my hubby’s Mom. We just got back home today from our visit in another state with her. We use to meet half way with his Mom and sister, but at 89 Mom is having some health issues so we went all the way. Hubby and I did all the cooking and clean up for meals while there. When asked what dessert she would like, she asked for our angel food cake. So that is what we made.
The last book I read was A HARVEST OF HEARTS by Laura V. Hilton. Love Laura’s books.
The last photo I took was of a pair of eagles at their nest. They have two eaglets who are so cute. A park ranger told us where this nest was and since it’s on the way home we had to stop We ended up watching and photographing them for about 2 hours. Totally amazing!

The last book I read was The Protector’s Bond by Lee Tobin McClain, and the last picture I took was of my 16 year old and 11 year old grandsons holding up fish they caught while we were catfishing on Saturday. I haven’t baked anything sweet for about a month, so I don’t remember what the last thing was. I did make homemade buttermilk biscuits last night, but those technically aren’t a sweet. 🙂 The last book I read was Hate That Cat by Sharon Creech for my Children’s Literature class. And the last picture I took is of my dad sitting in the rocking chair holding my sleeping two-month-old cousin.
